In this edition of Kitchen Nightmares, Gordon visits Le Bistro, Lighthouse Point, Florida. Since 2001, a professional chef Andy Trousdale and his wife Elin are running this restaurant. In the introduction part, Andy claims to be best and do not see issues with his cooking. His wife Elin also considers Andy as a good chef, she does not know where are they missing. Elin tells that it is getting hard to manage the debt and she does not know where the money will come from. Waiter Alex tells that the issue is there with Andy, Andy thinks that his food is perfect and he does not listen to any criticism regarding food.

Gordon arrives at the restaurant which is closed for the lunch as Andy is giving cooking class. Gordon joins Andy in the class, He thinks that Gordon is making a mockery out of the class in front of his customers. Gordon sits down with Andy and his wife Elin and asses the situation. Gordon asks if the restaurant has made any money in past, Elin says “no”, Andy goes defensive on that. Gordon asks Andy to make something for him so he can taste the food.

Food Sampling:

The waiter Alex brings in the first order, duck rillette, Gordon chips a tooth because there are bones in the dish. Alex takes the food back to the kitchen and Andy dismisses the criticism. Alex brings in the second dish - lamb curry roll, it is very rubbery, Gordon sends it back. Andy thinks that Gordon is just trying to make him feel bad by sending food back.

After tasting the food, Gordon tries to tell Andy his inputs, Andy tells that no one told him the issues in the kitchen. Alex comes forward and corrects Andy and says, Andy, chased him away when he told him. Gordon speaks with Andy alone and tells him that he is here to help. Andy tells him that if he has issues with the food, it is his own opinion, he does not work for Ramsay.

Gordon comes to the restaurant to observe the dinner service. He notices that there is only one person taking orders, upon checking, he understands that this helps in slowing down orders for Andy. After Gordon tells her that one table is waiting for too long, Elin takes one order, which irritates Andy. Andy has managed to send some food out of the kitchen, but, food is coming back. Shockingly, Andy denies to re-cook some returned dish and asked the customer to make some other choice from the menu. Customers keep sending the food back and Andy continues to defend his food. Gordon tries to talk some sense in Andy, but, Andy resisted and a big fight breaks out between Andy and Gordon.

Before dinner service ends, Gordon asks customers to fill out few feedback forms. After a poor dinner service, Gordon sits down with staff and shares the customer’s feedback with Andy and others. Andy tries to dodge each and every accusation. Gordon calls Andy ignorant, in response Andy tells everyone “I am a loser” sarcastically. Gordon asks everyone to leave and give him and Andy some privacy. Gordon asks Andy to honestly tell him if he is committed to making the changes, Andy says ‘yes' and they close the discussion.

The next day, Gordon takes them to the harbor and makes Andy and Elin meet old customers. Gordon asks them to share their experiences with Le Bistro. Andy is still defensive about every positive feedback. Back in the kitchen, Gordon tells Andy that he along with sous chef Henrik will focus on one dish only to make his life little easier. Gordon and chef Henrik cook a local snapper, everyone likes it.

At the dinner service, two people are taking orders, but, Andy is slow from the start. Chef Henrik keeps waiting for him for sending out the food. In order to show how slow kitchen is running, Gordon runs to a nearby restaurant and orders a tuna. 45 minutes into the service and Andy manages to send some food out of the kitchen. While the specials cooked by chef Henrik are a hit, old menu is meeting with negative comments. Customers are sending food back, that puts more pressure on the kitchen. In the meantime, Gordon gets his ordered tuna from the nearby restaurant, he shows Elin the difference in both the services.

After a frustrating dinner service, Gordon sits down with Andy and Elin and tries again to get Andy to work with him. Andy tells Gordon that people here do not understand the food, Gordon tells him to stop talking like a snob. Gordon asks Andy to not throw away everything that he has earned in his life. That breaks Andy and he agrees to work with Gordon for a fresh start.

Relaunch:

Gordon’s team gives a makeover to the restaurant overnight, adding a few modern elements to the overall vibe. Elin and Andy are very happy to see the decor changes. Gordon and Andy cook the new menu side by side. They show the staff and Elin the new dishes and everyone likes the decor and menu changes very much. Gordon tells them that they will be having VIPs at every table for the relaunch night, everyone is excited.

The restaurant is fully packed for the relaunch night. Andy starts strong with right delegating and communication and customers are loving the new menu. Food is leaving the kitchen on time and there is a phenomenal buzz inside dining area. Things turn bad in the kitchen when Andy slips back to his old habits, he stops communicating and delegating and is silent.

Gordon takes him outside and gives him a small pep talk. That straightens Andy and he comes back to his station and starts communicating, pushing orders out of the kitchen. Food starts leaving kitchen again and customers are raving about the food. Relaunch night ends on a positive note. Gordon sits down with Andy and Elin and tells them how successful the relaunch was. Andy thanks Gordon for the help.

What happened next?

At the end of the episode, we see that after the relaunch, in the months that follow, Andy and Erin continued on the success path. Food that restaurant is serving is good and they have got returning customers to fuel their business.

One year after the launch, Gordon revisits Le Bistro, Lighthouse Point, FL (Website link in the resources). Andy has changed completely, he is more relaxed, composed and looks less tired and stressed. Elin is happy with the turnaround. Gordon asks Andy to surprise him with his lunch, Gordon praised the food. When Gordon suggested that the lunch is on the house, precious “AHA” moment is there on Andy’s face.

Eight years after Le Bistro is still open and Andy is still doing cookery classes. Online reviews across online portals are quite positive.

Query: How has Kitchen Nightmares affected your business? Is Gordon Ramsey actually an ass hole in real life?
Andy: We are very glad we participated in the show. The fact that we are a thriving landmark South Florida restaurant helps. Elin and I have proven to be successful restaurateurs. It's great to have a little PR assistance from our friend Gordon to push things along. Either spend thousands on a good publicist or do what we did, have Gordon come in, put up with his shit for a week and Voila! Two major network shows, International TV--repeated often--paid for by a little mocking. So what?

This was an excellent business decision. I don't think Gordon is an asshole. If he is, he is a very, very successful asshole. Gordon and I had the same start, schlepping it in some very high-end perfectionist kitchens with hard-ass, ruthless, tyrant chefs. Only the strong survive. Being verbally and mentally beaten up in a kitchen over time can make anyone an asshole. Me, I sometimes wonder what would have become of my career if I stayed in England. However, we have done everything on our own and I am very proud of that. We don't owe anyone anything! We sleep easy at night.
