In this episode of Kitchen Nightmares, Gordon Ramsay visits Bazzini, Ridgewood, NJ. This restaurant is owned by Paul Bazzini and his wife Leslie. Paul has worked his way up from a chef to an executive chef to a restaurant owner. In the introduction video, Paul describes that transition from chef to a restaurant owner is not easy. He is not clear about the direction anymore and he is not sure what to do. Paul is shown struggling as he clearly has given up. His wife tells that she is supporting the restaurant financially. As per her, Paul was not like this always and clearly he is unable to make the needed changes as a restaurant owner. Food is not right and customers are not happy, but for everything, Paul has his excuses ready all the times.

Gordon arrives at the restaurant, but, finds it closed. He finds out that restaurant is open only for dinner. He leaves a note and leaves. One hour later when Paul comes at the restaurant, he gives Gordon a call. Gordon meets Paul and as Gordon is starving, he asks Paul to cook something special. Gordon is amazed by the tiny dining area and depressing decor of the restaurant.

Food Sampling:

The first dish that Gordon gets is Fettucini Pesto followed by Chicken Milanese. Fettucini Pesto is cold and bland & Chicken Milanese is very hard from outside and very dry from the inside. Owner and chef’s wife Leslie comes into the restaurant at that time and introduces herself. Waiter Alex brings in the next dish, Mushroom Risotto. Gordon twirls the plate, but the dish is so sticky and mushy that it does not move a bit. Inside the kitchen, Paul is giving his excuses while preparing the next dish for Gordon. The last dish, Almond Crusted Tilapia arrives, again very bland, Gordon does not like anything.

Gordon is still hungry, he asks Alex for desserts and Gordon orders carrot cake and cheesecake. Pastry chef, Sharyn enters the kitchen then and goes out in the dining area to meet Gordon. Gordon is impressed with the desserts and asks for carrot cake’s recipe from Sharyn. Gordon then goes into the kitchen to meet Paul and share his inputs. Gordon tells him that he is not impressed by anything that Paul has served him. Gordon tells them that he will be present during dinner service to observe and leaves the restaurant. Paul, as usual, is trying to find excuses for poor dishes that he served to Gordon.

Gordon arrives at the dinner service and finds out that crab cakes are not fresh. They are from a day earlier and Paul is just recooking them again on order. One customer sends his crab cakes back because they are overcooked, an argument breaks out between Sharyn and Paul over chicken prep. Gordon observes that prepared food is sitting on the pass for too long. Customers, of course, are complaining about cold food due to that.

One hour into the dinner service, not much food goes out of the kitchen. Gordon just does not think that Paul can handle it any further and asks the waiter to apologize to the customers. Gordon shuts down the dinner service, Paul understands that despite having all the tickets, it is his fault that he did not send food in a timely manner. Gordon talks one to one with Paul after the failed dinner service. Pauls tells Gordon that this is not how he thinks of serving food. Gordon tells him that he has given up.

The next day, Gordon wants to see Paul’s passion for the food and he asks him to cook fresh pasta within next 15 minutes. Paul is invested in the process and makes fresh pasta for Gordon, Gordon likes it. While explaining pasta to Gordon, Paul shows excitement and passion for the food. Gordon thinks of doing a quick lunch service and tells owners and Sharyn about it. Gordon helps Paul in the kitchen while Leslie and Sharyn handle the front of the restaurant. Apart from small mistakes in the dining area, lunch service is successful and more importantly profitable.

Relaunch:

Gordon’s team give a makeover to the restaurant overnight, adding a contemporary touch to the overall vibe. The new menu is designed to reduce the pre-time in the kitchen and is 15 dishes down from 27 they used to serve. Gordon has invited some famous people, celebrities for the relaunch and the restaurant is full of customers. At first, Paul’s attitude is positive, it soon changes into miscommunication and Paul again is in mid of excuses. 45 minutes into the service and no food has left the kitchen.

The relaunch is falling apart as whole staff starts to feel the pressure and an argument breaks out inside the kitchen. The sous chef, AL leaves the kitchen without telling and that adds up to the pressure. As AL walks out, Sharyn and Gordon get behind the line to help Paul clear the food orders. Now the food starts leaving the kitchen and customers are more than happy with the food they are getting describing it “Worth the Wait”.

After the dinner service, Gordon thanks Sharyn for her help and tells her that her personality and her help are important for the future of this restaurant. Gordon sits down with Leslie and Paul, despite a successful relaunch, Gordon tells Paul that he is not convinced with Paul’s dedication. Paul says all the right words at right times, but, now is time to do the right things is what Gordon says to Paul.

What happened next?

At the end of the episode, we see that after the relaunch, Paul hires a new sous chef and with the fresh pasta on offering started making profits. Sharyn left the restaurant to get away from Paul and to focus more on her baking business.

After one year of the relaunch, Gordon visits the restaurant to find out it closed for the lunch. Gordon calls Sharyn and finds out that the restaurant is closed permanently. Gordon meets Sharyn in her kitchen where she is baking cakes and her small venture is doing well. Online reviews after the relaunch were mixed. Bazzini (Link in the resources) closed in June 2010.

Owner and chef Paul, as per his Facebook profile (Link in the resources), now runs another successful restaurant Hearth and Tap (Link in the resources). Online reviews are quite positive about this restaurant.

The pastry chef, Sharyn Reisberg Sherman, started her business -> Simply Home Made Desserts (Facebook page link in the resources). As of Jun 2018, the website for the business is down, however, recent updates on her FB profile and Instagram page suggest that she is doing well and is providing desserts to local eateries.
