This week, Gordon Ramsay visits Sebastian's, Toluca Lake, California. The restaurant is owned by Sebastian Di Modica, who is a part-time actor. In introduction part, Sebastian talks about he is a self-taught chef and all formal training he has is given to him by his mom from an early age. He considers himself to be an easy person to work with, have impeccable taste for right work and has fired 49 people in past 12 months. His team, however, thinks he is a very tough person to work with.

Sebastian’s wife Nichole has to fund over $300 K in restaurant and Sebastian’s dream of becoming a worldwide chain with unique menu concept.

As Gordon walks in, he remarks about flashy entrance sign. Sebastian eagerly greets Gordon and introduces his menu ‘CONCEPT’ to Gordon which baffles Gordon. Even staff members are shown having a hard time remembering the menu ‘CONCEPT’ as one can choose different variations and combinations of meats, sauces, sides and more.

Is Sebastian's, Toluca Lake, California closed?

Yes, Sebastian got back to his ways and old menu found its place back as the main menu. Chef Q (later features in another nightmare episode) tells Gordon that Sebastian just disappeared one day. The family has moved back to Boston.

Food Tasting:

Gordon orders the calamari, a New York strip steak and house special Pizza. Gordon confirms with Sebastian if calamari is fresh, which he says is fresh, but, waitress Sonja tells Gordon that calamari is frozen. After tasting calamari, Gordon asks Sonja for a sick bag. Sebastian does not like the remark and talks to one of his staff member that Gordon is not a professional and should not have said so. Sebastian even dials up his mother and tells her about Gordon’s visit and his remark. She asks him to throw Gordon out. Gordon arrives at dinner service and sees waitresses struggling with telling customers the unique menu ‘CONCEPT’. Gordon gets into the freezer and finds out 80% of the food is frozen. In his quest to impress Gordon, Sebastian asks cook Lou to take some other station and starts working on salads claiming he can cook anything thrown at him. Unlucky for him, a customer finds hair in salad and Sebastian gives away over $300 worth of food for free.

Gordon notices that there are two wood-burning ovens in the restaurant, still, microwave ovens are heavily used. After dinner service, Gordon tells Sebastian that 95% of food served is frozen. Sebastian replies that he is happy as long as the customer gets ordered food and he himself can go and meet customer. Gordon sits down with staff and owner and tells them that they need to focus on wood-burning ovens and homemade Pizzas and if they do it alone restaurant will be successful. He also brings in two professional Pizza tossers who train the staff for homemade Pizza. Overnight the restaurant gets a makeover which whole staff likes. Gordon also unveils the new Pizza dough maker leaving Lou in tears. Gordon also shares the new menu with Sebastian and staff which clearly upsets Sebastian. He does not look happy at all with menu change and claims that there is nothing unique in the suggested menu.

Relaunch:

Coincidentally, relaunch night falls on the same night as of Academy Awards, hence, Gordon rolls out a red carpet in front of the restaurant. The restaurant gets full in no time. While waitresses are taking orders and chef and cooks are cooking meals, Sebastian stands there and keeps hovering over stations. He starts ranting and shouting at his staff questioning that this is his restaurant. Gordon tells him to keep calm and take control of the kitchen. Sebastian goes to his office and starts cleaning while kitchen gets busy. Gordon calls for Sebastian but he is nowhere to be found.

In the meantime, the new simple menu is huge hit and customers are loving fresh Pizzas and dishes they are being served. Sebastian loses control and wants to go back to the old menu and the whole thing starts confusing staff more. Gordon gets upset when he finds out that Sebastian is serving from the old menu. He takes Sebastian to a corner and tells him that in his professional life he has never met anyone he believes in as little as Sebastian and he will just go back to his old ways. Sebastian gets furious and chases Gordon shouting and screaming but as he gets out and gets some fresh air he realizes that Gordon is right and he needs to change. He comes back and starts pushing orders. Relaunch finally is a success.

What Happened Next?

After the show is aired, Sebastian’s (Yelp profile in the resources) got back in his old ways and old menu finds its way back in the restaurant. Yelp reviews were mixed at that point. however, in Jan 2008, Sebastian’s got closed and the owner and family went back to Boston. Chef Q (who later appears in another restaurant in Kitchen Nightmares as Head Chef at Casa Roma tells that the owner just disappeared.

Sebastian apparently is now running a financial consulting business. He also had an acting part as a detective in a minor movie in 2013, named ‘Angels Around Me’ (Sebastian's IMDB profile in resources).

Sebastian’s became an Italian Pizza restaurant ‘Robano’s’. They kept most of the decor done by Gordon. During their active period, online reviews were more in 1-3 range. They got closed in 2014. On its place there is new restaurant ‘The Red Door’ and online reviews are mostly positive.
